There’s a big debate here in Wisconsin about if you should cook your brats in beer and onions before grilling or grill the brats first and then put them in the beer and onion bath. I’m firmly on the side of cooking brats in the beer-onion bath first and then grill them.
But there’s one thing every brat chef from Wisconsin can agree on is that you must NEVER-EVER poke holes in the brats before cooking. Poking holes will just let all the wonderful juices out and you’ll end up with dried out hunks meat.
